Red Beans and Rice

Actually, you're on your own with the rice, but here's how I make my Red Beans

  • 2 cups dry kidney beans
  • 1 large onion, chopped
  • 3 garlic cloves, crushed or minced
  • 1/2 c. chopped celery leaves (add the tender celery stalks from the heart if your bunch doesn'et yield enough leaves)
  • 1/2 green pepper, seeded and diced
  • 5 cups water
  • 1 Knorr vegetable bullion cube (they are large)
  • 2 T. nutritional yeast
  • 2 bay leaves
  • 1 t. ground cumin
  • 1 t. dry mustard
  • 1/4 t. dill
  • 1/4 t. cinnamon
  • 1/4 t. ground coriander

Rinse the beans and soak them overnight. Throw everything in a crock pot and cook it all day. If you don't have a crock pot, you'll get the best results by sauting the onion, garlic, celery and peppers in a little olive oil, then adding the rest of the stuff. Cook that until the beans are soft and break up easily.
