Actually, you're on your own with the rice, but here's how I make my Red Beans
- 2 cups dry kidney beans
- 1 large onion, chopped
- 3 garlic cloves, crushed or minced
- 1/2 c. chopped celery leaves (add the tender celery stalks from the heart if your bunch doesn'et yield enough leaves)
- 1/2 green pepper, seeded and diced
- 5 cups water
- 1 Knorr vegetable bullion cube (they are large)
- 2 T. nutritional yeast
- 2 bay leaves
- 1 t. ground cumin
- 1 t. dry mustard
- 1/4 t. dill
- 1/4 t. cinnamon
- 1/4 t. ground coriander
Rinse the beans and soak them overnight. Throw everything in a crock pot and cook it all day. If you don't have a crock pot, you'll get the best results by sauting the onion, garlic, celery and peppers in a little olive oil, then adding the rest of the stuff. Cook that until the beans are soft and break up easily.
